Originally, I called this my sub salad, but I upgraded the name to antipasto salad.<\/p>\n<p>This is freaking heaven in my mouth.<\/p>\n<h4>Ingredients<\/h4>\n<h5>For four days, this is what I get from the deli:<\/h5>\n<ul>\n<li style=\"text-transform:none;\">1\/4 pound each of hot ham, capocollo, sopressata, pepperoni<\/li>\n<li style=\"text-transform:none;\">1 pound of liverwurst (not part of the sub, but I rarely get organ meat in my diet, and this is a good place to add it).<\/li>\n<li style=\"text-transform:none;\">1\/4 lb of mild provolone and\/or fresh mozzarella<\/li>\n<\/ul>\n<h5>Other toppings:<\/h5>\n<ul>\n<li style=\"text-transform:none;\">sliced dill pickles (I use real fermented ones!)<\/li>\n<li style=\"text-transform:none;\">black olives<\/li>\n<li style=\"text-transform:none;\">diced red onion (but scallions are lower carb, and currently free in my garden)<\/li>\n<li style=\"text-transform:none;\">giardiniera (I plan to ferment some this fall)<\/li>\n<\/ul>\n<h5>lettuce:<\/h5>\n<p>My first time, I bought a couple bags each of butter lettuce and of Italian mix (romaine, radicchio, endive).  But until my garden stops producing ridiculous amounts of lettuce, I\u2019m not buying anymore lettuce!<\/p>\n<h5>dressing ingredients<\/h5>\n<div class=\"imgdivright\" style=\"width:250px;\">    <img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2020\/09\/IMG_20200627_175642016113ae592833f8f3848ba6ab26125b1f1f1ff404fea40d50931bd67e698aa91ec25282113ae592833f8f3848ba6ab26125b1f1f1ff404fea40d50931bd67e698aa91ec2529.jpg\" width=\"250\">    <span style=\"align: left; text-align: left;\"><i>Dressing made yesterday. Ingredients pulled from fridge in under a minute.<\/i><\/span><\/div>\n<ul>\n<li style=\"text-transform:none;\">4 cloves garlic<\/li>\n<li style=\"text-transform:none;\">1 tsp unground sea salt<\/li>\n<li style=\"text-transform:none;\">2 TB sun-dried tomatoes, canned in olive oil<\/li>\n<li style=\"text-transform:none;\">2 TB fresh basil<\/li>\n<li style=\"text-transform:none;\">2 TB fresh parsley<\/li>\n<li style=\"text-transform:none;\">3 fresh rosemary needles<\/li>\n<li style=\"text-transform:none;\">4 fresh thyme leaves<\/li>\n<li style=\"text-transform:none;\">1 cup extra virgin olive oil<\/li>\n<li style=\"text-transform:none;\">1\/4 cup of Parmigiano-Reggiano, freshly grated<\/li>\n<li style=\"text-transform:none;\">1\/2 cup red wine vinegar<\/li>\n<li style=\"text-transform:none;\">1 tsp dry oregano<\/li>\n<li style=\"text-transform:none;\">1 tsp freshly ground black pepper<\/li>\n<li style=\"text-transform:none;\">pinch of red pepper flakes<\/li>\n<\/ul>\n<p>I like having the fast, easy recipes of the <a href=\"https:\/\/KickDiabetesToTheCurb.com\" target=\"_blank\" rel=\"noopener\">Ridiculously Big Salad book<\/a> in my pocket when I need them, but given I spend so much less time in the kitchen generally, sometimes I\u2019m willing to do a bit more work.<\/p>\n<p>My dressing is quite a bit more complex than Amanda\u2019s recipes, but that\u2019s why I make a 4-day batch at once.<\/p>\n<h4>Method<\/h4>\n<div class=\"imgdivright\" style=\"width:250px;\">    <img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2020\/09\/IMG_20200627_180935457113ae592833f8f3848ba6ab26125b1f1f1ff404fea40d50931bd67e698aa91ec25282113ae592833f8f3848ba6ab26125b1f1f1ff404fea40d50931bd67e698aa91ec2529.jpg\" width=\"250\">    <span style=\"align: left; text-align: left;\"><i>Greens chopped and tossed in some dressing. Meat and cheese sliced and added to bowl. Pickle sliced, olives added. More dressing drizzled over top. 5-10 minutes to prepare dinner!<\/i><\/span><\/div>\n<ol>\n<li style=\"text-transform:none;\">Add garlic and salt to a mortar and pestle and process until it forms a paste.<\/li>\n<li style=\"text-transform:none;\">Add tomatoes and grind briefly just to to mix the oil in.<\/li>\n<li style=\"text-transform:none;\">Add all the fresh herbs and grind until it\u2019s a relatively homogenous paste (rosemary just has to be broken in half, not ground all the way up).<\/li>\n<li style=\"text-transform:none;\">Scrape into pint-size jar and add 1 cup extra virgin olive oil right away to let the flavors infuse into the oil before continuing.<\/li>\n<li style=\"text-transform:none;\">Add cheese, vinegar, oregano and both peppers.<\/li>\n<li style=\"text-transform:none;\">Cap and store on counter so flavors will continue to infuse.<\/li>\n<\/ol>\n<p>Note that this dressing doesn\u2019t refrigerate well; the olive oil will solidify.
