First, my \u201cnormal\u201d cheese lasagna recipe is *way* too caloric.  But if I cut the cheese significantly, would this vegetarian casserole have enough protein for a meal?  A quick back-of-the-envelope calculation indicated it would.<\/p>\n<p>Following the basic framework of the RBS, if I wanted to make 4 servings, I\u2019d need 3 pounds of zucchini; will this fit in my lasagna pan?  As you can see from the photo, it did!<\/p>\n<p>So we had a relatively healthy low carb dinner possible here.<\/p>\n<p>The zucchini was free, as it often is this time of year whether you garden personally or not, I have a small herb garden, already had sauce and mozzarella on hand, so only needed to buy some ricotta making for a relatively cheap low carb meal for 4 days.<\/p>\n<p>I didn\u2019t want it watery though, as often happens with zucchini.  But having just made dill pickles a few weeks earlier, it occurred to me that salting the zucchini in advance would draw a lot of the water out.<\/p>\n<p>And if I used my food processor with the slicing blade to slice it very thinly, there\u2019d be a lot of surface area for the salt to work on, and simplifying the prep like that would make this a pretty easy keto dinner. And very thin slices would make it cook about as fast as a lasagna made with traditional precooked noodles.<\/p>\n<p>So I converted my baked zucchini recipe to a keto casserole recipe, but it is so zucchini-heavy that it could almost be considered zucchini parmesan!<\/p>\n<p>After running the macros, I discovered that this easy zucchini recipe was also a very low calorie recipe.  In fact, I\u2019d need a small salad with a half portion of RBS salad dressing or a <a href=\"https:\/\/reversingdiabetes.xyz\/blog\/basic-chaffles\/\">chaffle<\/a> (with garlic butter?) to make it caloric enough for a keto friendly OMAD meal.<\/p>\n<p>Without further ado, here\u2019s my quick and easy low carb dinner recipe:<\/p>\n<h5>Ingredients<\/h5>\n<ul>\n<li style=\"text-transform: none;\">3 pounds zucchini<\/li>\n<li style=\"text-transform: none;\">sea salt<\/li>\n<li style=\"text-transform: none;\">1\/4 cup fresh chives (or 4 tsp dry)<\/li>\n<li style=\"text-transform: none;\">1\/8 cup fresh flat-leaf parsley (or 2 tsp dry)<\/li>\n<li style=\"text-transform: none;\">1 TB fresh basil (or 1 tsp dry)<\/li>\n<li style=\"text-transform: none;\">1 tsp dried oregano<\/li>\n<li style=\"text-transform: none;\">a large egg<\/li>\n<li style=\"text-transform: none;\">15 oz container of whole milk ricotta cheese<\/li>\n<li style=\"text-transform: none;\">1\/2 cup Parmesan, divided<\/li>\n<li style=\"text-transform: none;\">3 cups whole milk mozzarella<\/li>\n<li style=\"text-transform: none;\">jar of marinara sauce<\/li>\n<\/ul>\n<h5>Method<\/h5>\n<ol>\n<li style=\"text-transform: none;\">Preheat oven to 350.<\/li>\n<li style=\"text-transform: none;\">Put zucchini through food processor with slicing blade.  Toss with lots of sea salt and put in colander to drain for at least 15 minutes; longer is better.<\/li>\n<li style=\"text-transform: none;\">Finely mince the fresh herbs (or measure if you\u2019re using dry).  Mix together with the oregano.<\/li>\n<li style=\"text-transform: none;\">Crack egg into a bowl and lightly beat.  Mix in ricotta, the herbs, and 1\/4 cup of the Parmesan.<\/li>\n<li style=\"text-transform: none;\">Wipe down drained zucchini with clean kitchen towels or paper towels to remove most of the salt and dry.<\/li>\n<li style=\"text-transform: none;\">In a lasagna pan, layer:<br \/>\n1\/3 of sauce<br \/>\n1\/3 of zucchini<br \/>\n1\/2 of ricotta mixture<br \/>\n1\/3 of mozzarella<br \/>\n1\/3 of zucchini<br \/>\n1\/3 of sauce<br \/>\nrest of ricotta<br \/>\n1\/3 of mozzarella<br \/>\nrest of zucchini<br \/>\nrest of sauce<br \/>\nrest of mozzarella<br \/>\nrest of Parmesan<\/li>\n<li style=\"text-transform: none;\">Bake for about 60 minutes, until the zucchini is soft through and the cheese is bubbly.<\/li>\n<\/ol>\n<p><img decoding=\"async\" border=\"0\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2020\/08\/NutritionLabel-zucchinilasagna.png\" alt=\"32 g total carb, 7 g fiber, 25 g net carb, 43 g protein, 43 g fat, 660 calories \" style=\"float: left; margin: 10px 5px; width:190px;\"><br \/>\nYes, that entire lasagna pan makes only 4 very low-calorie servings; talk about a filling meal!<\/p>\n<p>The sauce I used was <a href=\"https:\/\/amzn.to\/2D0piLY\" target=\"_blank\" rel=\"noopener\">365 marinara<\/a> from Whole Foods via Amazon, but I don\u2019t particularly recommend it.  It was bought during a period of covid when shopping was difficult and my normal choice was unavailable. But you\u2019ll need the macros to compare to whatever you choose if you track macros.<\/p>\n<p>P.S. For the gardeners out there, <a href=\"https:\/\/www.highmowingseeds.com\/organic-non-gmo-costata-romanesc-zucchini.html\" target=\"_blank\" rel=\"noopener\">Costata Romanesco<\/a> is my favorite zucchini variety; even if you miss one hiding under a leaf until it\u2019s ginormous, it\u2019s still pretty yummy and isn\u2019t too seedy.
