For the non-keto folks, provide tortillas, cheese and sour cream. The next day, while the chicken roasts, I chop and marinate the veggies.<\/span><\/div>\n<p><!--\n\n<div class=\"imgdivcenter\"><img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2021\/11\/PXL_20210509_142319253-1-300x225.jpg\" alt=\"\" style=\"display:inline-block; width:300px; height:225px;\"\/><span style=\"align: left; text-align: left;\">The next day, while the chicken roasts, I chop and marinate the veggies (making a double batch in this pic).<\/span><\/div>\n\n--><\/p>\n<div class=\"imgdivcenter\"><img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2021\/11\/PXL_20210509_152143557-1-225x300.jpg\" alt=\"\" style=\"display:inline-block; width:225px; height:300px;\"\/><img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2021\/11\/PXL_20210509_152139865-1-300x225.jpg\" alt=\"\" style=\"display:inline-block; width:300px; height:225px;\"\/><span style=\"align: left; text-align: left;\">I fry the veggies while the chicken cools, then slice it into strips.<\/span><\/div>\n<div class=\"imgdivcenter\"><img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2021\/11\/PXL_20210509_152736974-225x300.jpg\" alt=\"\" style=\"display:inline-block; width:225px; height:300px;\"\/><img decoding=\"async\" src=\"https:\/\/reversingdiabetes.xyz\/blog\/wp-content\/uploads\/2021\/11\/PXL_20210509_155141241-1-225x300.jpg\" alt=\"\" style=\"display:inline-block; width:225px; height:300px;\"\/><span style=\"align: left; text-align: left;\">I fry the chicken until the marinade fully evaporates and the chicken browns, then add it to the veggies.<\/span><\/div>\n<h3>best chicken fajitas<\/h3>\n<h4>Ingredients<\/h4>\n<h5>main ingredients<\/h5>\n<ul>\n<li>2 lbs boneless, skinless chicken breasts<\/li>\n<li>1 red bell pepper<\/li>\n<li>1 orange bell pepper<\/li>\n<li>1 yellow bell pepper<\/li>\n<li>1 red onion<\/li>\n<li>1 yellow onion<\/li>\n<li>1 TB coconut or avocado oil for frying<\/li>\n<\/ul>\n<h5>chicken fajita marinade<\/h5>\n<ul>\n<li>4 TB lime juice<\/li>\n<li>2 TB avocado oil<\/li>\n<li>4 cloves garlic, pressed<\/li>\n<li>2 tsp tamari (or soy sauce or coconut aminos)<\/li>\n<li>1 tsp sea salt<\/li>\n<li>1\/2 tsp cayenne pepper<\/li>\n<li>1\/2 tsp freshly ground black pepper<\/li>\n<\/ul>\n<h5>veggie marinade<\/h5>\n<ul>\n<li>2 TB avocado oil<\/li>\n<li>2 TB water<\/li>\n<li>1 tsp tamari (or soy sauce or coconut aminos)<\/li>\n<li>1\/2 tsp lime juice<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<ol>\n<li>Mix up chicken marinade ingredients in roasting pan.  Add chicken and turn over several times; cover with plastic wrap and refrigerate overnight.<\/li>\n<li>Next day, preheat oven to 350.  Remove plastic wrap from chicken, turn it over again, and roast it in the mrainade for 40 minutes.<\/li>\n<li>While chicken roasts, mix up the veggie marinade in a large bowl.  Slice the peppers and onions and mix in the marinade.<\/li>\n<li>While chicken cools, melt coconut oil in a large pan over medium-high heat.  Fry the veggies and their liquid in several batches, until softened and slightly blackened.  Remove each batch to a large storage container before proceeding with the next batch.<\/li>\n<li>When chicken has cooled enough to handle, slice into strips.  Add the chicken, along with it&#8217;s marinade and pan juices to the frying pan. Cook until all liquid has evaporated and the chicken begins to brown.
