keto Scotch eggs

I made Scotch Eggs recently.

Traditionally, these are breaded and deep-fried, but I have always been entirely too lazy to do all that, so it’s keto!

Basically, you hard-boil 6 eggs, however you usually do so, then peel them. Take 1 lb bulk breakfast or sage sausage and split into 6 equal pieces, wrap around each egg (this is a greasy mess to do, but worth it!). Place the wrapped eggs in any baking dish and bake at 350 for 20-25 minutes.

Per egg: 1g carb, 17g protein, 36g fat, 400 calories.

These reheat in the microwave just fine or can be eaten cold.
