keto coleslaw

Last summer, I made this constantly. Basically, I made giant batches of dressing and bought bags of cole slaw to mix up as I went each day.

Easy-peasy!

Dressing:

  1. Stir 4 tsp unground salt into 1 cup white vinegar until it dissolves completely.
     
  2. Add 1 quart Greek yogurt, 1 quart avocado mayonnaise, 1 cup dried, mince onion, 1 tsp powdered stevia and about 1 1/2 tsp black pepper.
     
  3. If you want to thicken, add 2 TB sunflower lecithin (I also add my mineral drops, and vitamin D3 and K2 drops in here).<
     

That’s it. I store in a large Pyrex in the fridge.

This makes 16 servings. I’m not real precise with the servings, I just add enough to moisten up the cabbage.

Someone is going to ask me how long this lasts, and I have no idea. Coleslaw is my favorite salad, so if I have dressing made, I’m going to keep eating it until it’s gone! I can get variety in the rest of my meal.
