near instant chicken soup

I’ve been using canned chicken as a side to up my protein without increasing my calories much; also canned chicken is darned cheap.

But adding mayo to it adds more calories than I want, so I’ve been nuking a can in some broth. I usually use bone broth, but Steve had a problem with a delivery that wound up with us having around 100 containers of organic chicken broth, so I won’t be making bone broth for a while. Meanwhile, I spike with some gelatin.

And then I got fancy; I decided instead of just flavoring with dried onion and parsley, I’d get some actual veggies to add to it. They needed to be instant, as this is a side dish, not a main.

So I went on Amazon and found these ones (affiliate link). Handy!

It’s February, I’m cold and grouchy and I’ve had enough winter and I need instant soup!

Near-instant soup: Mix in bowl 1 TB Gourmanity dehydrated vegetables (contains bell pepper, onion, carrot, celery, tomato, cabbage), 1 cup chicken broth and 1 drained 12.5 oz can chicken. Nuke.

Makes 1 serving @ 9g carb, 71g protein, 10g fat, 432 calories. You can season with salt & pepper or parsley and Parmesan to be extra fancy.

And this works well for those eating 2 meals a day also.
