I had a 6 lb pork shoulder roast and stuck it with a cup of bone broth in the instant pot on high pressure for 2 hours. Just as plain as can be! Then I shredded it with a couple forks and added a bottle of G Hughes Sugar Free BBQ Sauce (affiliate).
OK, this is a LOT of pulled pork and I live alone (well, with a kitty, but she doesn’t eat much!)
So I immediately froze half to thaw in a few weeks when I don’t feel like cooking.
Amanda calls this her good day/bad day strategy – the basic idea is when you’re having a good day, do something to prepare for a bad day. I don’t know when a bad day will come, but I know I’ll have pulled pork to nuke when it does!
I served this with cole slaw.
