
What’s your favorite from the Ridiculously Big Salad book?
I mean, I’m big on the cheeseburger salad; that’s probably my favorite, and also available on the main web site if you don’t have the book.
But I’m also really fond of the Asian peanut dressing. And I had an interesting use for it recently.
Someone gave me a ginormous napa cabbage, and given I’m one person, I was a bit confused what to do with that much. So I decided to stir fry it. I had a couple pounds precooked chicken in the freezer, bought a bunch of baby bok choy and a pound of mushrooms, and grabbed some scallions from my garden, and fried it all up in a big wok with some neutral oil with fresh ginger, garlic and turmeric.
And instead of making a traditional stirfry sauce, I mixed up a quadruple batch of the Asian peanut dressing and stirred that in.
No pics, because it was an unappetizing-looking brown dish. But it was one of the yummiest things I ever tasted and I ate it for almost a week!
