I had thawed a 3 lb package of boneless, skinless chicken thighs… needing dinner that night, but also leaving on an emergency over-the-road trip the next day.
I didn’t have time to deal with cooking, given meeting the pet sitter, finishing the packing, planning an Aldi trip on the way out, etc.
I threw the thighs in my largest Pyrex in the oven at 350 for 30 minutes, thinking I’d figure out what to do next when they came out.
When they came out, I threw half a jar of sugar-free spaghetti sauce on top, then a couple cups of mozzarella, then sprinkled Parmesan and threw it back in the oven for another 10 minutes.
Given no seasoning, no pork panko or anything, it was surprisingly edible for the laziest chicken parm ever!
I ate some that night, and after the rest cooled, threw the lid on the Pyrex and stuck it in the freezer. I was exhausted when I got home, and didn’t have to cook for days (3 lbs of chicken is a LOT!)
