
So during the weekly live video recently, we talked about Good Day, Bad Day strategies. And one type of “bad day” is just when I know I have a very busy week planned.
Those weeks, I tend to decide on taco salad. I tend to use romaine as I can chop a week’s worth in advance and it stay pretty edible. I mix a jar of sour cream with a jar of salsa, which acts both as dressing, and saves me cutting up the extras like cukes, onions, tomatoes, etc. That is all the prep except for having precooked protein.
Given I always have lots of cooked ground beef and chicken (sometimes other meats, like steak or roast), I nuke a pack with a bit of taco seasoning, while I throw the lettuce, a handful of cheese and a few big spoonfuls of dressing in the bowl, and dinner is ready in 2 minutes.
More importantly, there’s nearly no dishes, so the bulk of time involved is just the eating, getting through the ginormous salad!
During this video, I was asked for my taco seasoning recipe. Honestly, probably most bought ones are good if you know you like them, though some seem to contain unnecessary stuff like corn starch, but in such small amounts it probably doesn’t matter much.
The real advantage is being able to customize it to my own taste, which is admittedly very wimpy. I like flavor, but not capsaicin, so this may need to be adjusted if you’re not nearly as wussy as I am.
Taco Seasoning
Mix together 1 cup dry onions flakes, 1/3 cup unground sea salt, 1 cup paprika, 1/3 cup turmeric powder, 1/3 cup garlic powder, 1/3 cup oregano, 1/6 cup cayenne pepper and 1/6 cup cumin and store in a pint-sized container.
