
This has recently become a favorite though it doesn’t look great in the photo.
I basically nuke 12 oz frozen spiralized zucchini, drain, then add 1/2 lb protein from my freezer stash (this time, it was ground beef) and nuke to thaw. Then stir in 1/2 jar sugar-free tomato sauce and 1/2 cup shredded mozzarella and heat through. Add some Parmesan. This comes in at around 900 calories; less when I use chicken.
Granted, I like my zucchini lasagna much better, but it’s a good bit of work, whereas this zucchini s’ghetti just takes minutes, so is handy on a very busy day.
