
I recently stayed in a family home, sort of a B&B for people with family hospitalized.
Meals were included, but very carb-heavy, but we had access to a full kitchen to eat what we wanted.
Given we’re often asked what to do when traveling, I thought I’d share this.

I hit a grocery and bought a rotisserie chicken, a 3-pack of romaine hearts, a pack of spring mix, pico de gallo (easier than chopping multiple veggies myself), a block of cheese, sour cream and salsa.

I spent maybe 15 minutes chopping up the chicken and romaine, mixing the sour cream and salsa for dressing, and building my first salad… with enough leftovers for another 3 days.
An RBS is just the simplest thing to put together no matter where I am!
